Make: Spicy Salmon Tacos

These crowd-pleasing Salmon Tacos with Spicy Cabbage Slaw are not only a breeze to make, but also pack a punch of vibrant flavours.
For the Salmon:
- 4 salmon fillets, skinless
- 2 tablespoons olive oil
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- Salt and black pepper to taste
- Juice of 1 lime
For the Spicy Cabbage Slaw:
- 2 cups shredded green cabbage
- 1 cup shredded purple cabbage
- 1 carrot, thinly sliced
- 1/2 cup chopped fresh coriander
- 1 jalapeño, thinly sliced
- 2 tablespoons mayonnaise
- 1 tablespoon Greek yogurt (optional)
- 1 tablespoon sriracha sauce (adjust to taste)
- 1 tablespoon honey
- Juice of 1 lime
- Salt & black pepper to taste
For the Tacos:
- 8 small corn or flour tortillas
- Avocado slices for topping
- Lime wedges for serving
Salmon:
- Preheat the oven to 200°C.
- In a small bowl, combine olive oil, ground cumin, smoked paprika, salt, black pepper, and lime juice.
- Place the salmon fillets on a baking sheet lined with parchment paper. Brush the fillets with the spice mixture, ensuring they are evenly coated.
- Bake in the preheated oven for 10-12 minutes or until the salmon is cooked through and flakes easily with a fork.
- Remove from the oven and let it rest for a couple of minutes. Flake the salmon into bite-sized pieces.
Spicy Cabbage Slaw:
- In a large bowl, combine shredded green cabbage, shredded purple cabbage, julienned carrot, chopped cilantro, and thinly sliced jalapeño.
- In a separate small bowl, whisk together mayonnaise, Greek yogurt (if using), sriracha sauce, honey, lime juice, salt, and black pepper.
- Pour the dressing over the cabbage mixture and toss until everything is well coated.
Assembling Tacos:
- Warm the tortillas according to package instructions.
- Spoon the flaked salmon onto each tortilla.
- Top with a generous portion of the spicy cabbage slaw.
- Garnish with avocado slices and a squeeze of fresh lime juice.
- Serve the salmon tacos immediately and enjoy the burst of flavours.
