Make: Brie & Cranberry Bites

These delightful parcels of indulgence bring together creamy brie, homemade red wine-infused cranberry sauce, crunchy pecans, and a drizzle of honey—all encased in golden puff pastry.
- 1 sheet of puff pastry, thawed
- 200g Brie cheese, cut into small cubes
- 1/2 cup whole cranberry sauce (homemade recipe below)
- 1/4 cup pecans, finely chopped
- 2 tablespoons honey
- 1 egg (for egg wash)
- Fresh rosemary for garnish (optional)
For Cranberry Sauce:
- 1 cup fresh or frozen cranberries
- 1/2 cup granulated sugar
- 1/4 cup red wine (choose a Pinot Noir, Cabernet or Merlot)
- Zest of 1 orange
- 1 cinnamon stick
- In a saucepan combine cranberries, sugar, red wine, orange zest, and a cinnamon stick. Bring to a simmer over medium heat, stirring occasionally.
- Cook for 10-12 minutes or until the cranberries burst and the sauce thickens.
- Remove from heat, discard the cinnamon stick, and let it cool.
- Preheat your oven to 200°C.
- Roll out the thawed puff pastry sheet on a lightly floured surface.
- Using a sharp knife or a pizza cutter, cut the pastry into squares or rectangles, depending on your preference.
- Place a cube of Brie in the center of each pastry square, and top with a small spoonful of cranberry sauce.
- Sprinkle chopped pecans over the cranberry sauce, then fold the corners of each pastry square towards the center, creating a little package. Press the edges to seal.
- Beat the egg and brush it over the top of each puff pastry bite for a golden finish.
- Place the assembled bites on a baking sheet lined with parchment paper.
- Bake in the preheated oven for 12-15 minutes or until the puff pastry is golden brown and puffed.
- Remove from the oven and immediately drizzle honey over each puff pastry bite, garnishing with fresh rosemary if desired.
- Allow the bites to cool for a few minutes before serving!
