Make: Homemade Chocolate Bark

Equal parts festive and indulgent, the combination of rich dark chocolate, vibrant dried fruits, crunchy nuts, and a hint of coconut creates a delightful texture and flavour explosion. Sharing optional!
- 300g dark chocolate, chopped
- 1/2 cup mixed dried fruits (cranberries, apricots, cherries)
- 1/2 cup mixed nuts (almonds, pistachios, walnuts), roughly chopped
- 1/4 cup desiccated coconut
- 1/2 teaspoon sea salt flakes (optional)
- 1/2 teaspoon vanilla extract
- Line a baking sheet with parchment paper.
- In a heatproof bowl, melt the chocolate using a double boiler or microwave in short bursts, stirring frequently.
- Once the chocolate is melted and smooth, stir in the vanilla extract.
- Pour the melted chocolate onto the prepared baking sheet. Use a spatula to spread it out evenly, creating a thin layer.
- Sprinkle the mixed dried fruits and nuts evenly over the melted chocolate. Press them slightly into the chocolate to ensure they stick.
- Sprinkle desiccated coconut evenly over the chocolate bark.
- If you like a sweet-savory combination, add sea salt flakes sparingly.
- Place the baking sheet in the fridge and let the chocolate bark set for at least 1 hour or until firm.
- Once set, remove the chocolate bark from the fridge.
- Use your hands or a knife to break it into rustic pieces.
- Arrange the homemade Chocolate Bark on a festive plate and serve! Store any leftovers in an airtight container in the fridge, or wrap in some parchment paper and twine, ready to gift.
